![]() When done right, espresso can be rich, sweet and full of. You’ll need to reweigh from time to time if changing your coffee, grind size, and of course if your coffee gets old. So, you have bought your first Espresso machine, and you need some help getting those shots perfect. If your grinder has a timer to dose your coffee, feel free to use this to your advantage, but at some point you might want to weigh the coffee so you know what grind time produces a specific weight. You can weigh the coffee by itself, in a portafilter, or use a grinder with a built-in scale like the Baratza Sette 270Wi, a popular grinder for entry-level home baristas. An espresso shot is a small amount of coffee that is brewed under high pressure. If you want to take it a step further, you can use a scale to help you with this step. Other times you'll get a very thin espresso and might be fooled if you just look at the shot. Make sure it lasts 15 to 20 seconds, resulting in 1 ½ ounces coffee for a double ristretto with a caramel-colored crema (compared to 25 to 30 seconds for a standard espresso doubleshot). Now, sometimes the density is higher and you'll get less that 1 oz by volume but it will be 1 oz by weight. Pull the shot: Place the portafilter in the espresso machine and press the button to pull the shot using Manual mode. The final brew should be a 33 ml/1 oz shot of coffee, crema included. You can use a different amount, but for consistency, try sticking with 18 grams for each extraction, especially if you’re using the same coffee. Use about 7 gr of ground coffee, per each shot. If you’re dosing for a double shot of espresso, we suggest starting with 18 grams. Play around with your own grinder to see which results create the perfect espresso for you. ![]() Each and every one of those weird little parts plays a role in. ![]() If your extraction is too fast, adjust to a finer grind size, if on the other hand, your extraction is too slow, then adjust to a coarser grind size. Just look at them, with their screaming hot metal, scalding steam, and polished chrome tubes. The Golden Rule for espresso is that a double shot of espresso sits between 25-35 seconds from the first drip of espresso, which should get you a little over 2 ounces or 60 ml.
